Open a set for every card in it, in collector order, as a grid of card images. Cards you own are bright, with how many copies you have; cards you're missing are dimmed. Filter to Missing for a want list you can take to a card show, or to Owned to see what you've pulled.

Some sets are numbered with letters throughout: Trainer Gallery and Galarian Gallery subsets, Shiny Vaults and promo sets. Those count their own numbers as the main set, so a Trainer Gallery subset shows its own progress out of its own total instead of looking like a pile of secret rares.
Many collectors chase a master set: every card in every version, which usually means a reverse holo of each card as well as the normal one. TurnZero HQ's checklist is one entry per card number, and owning any version ticks it, so it tracks a set rather than a master set. By distinct cards numbered up to the total printed on them. A set whose cards read 025/198 is complete at 198 of 198. Secret rares numbered past that total, and cards in a lettered subset, are counted separately, so they sit on top of a completed set rather than holding it back. Four copies of one card count as one card toward the set.
Not toward the main count. They're shown as their own tally beside it, like 12 of 60 extra, because most collectors treat them as the chase on top of a finished set rather than part of finishing it.
Not quite. The checklist is one entry per card number, and owning any version of that card ticks it. A master set usually means every card in every version, reverse holos included. Your variants are still recorded on each card, so you can see which versions you have, but the set progress itself doesn't count them separately.
